Ingredients
Chicken & Marinade (the Popeyes secret base)
- 2 lbs chicken thighs (boneless or bone-in)
- 1 tsp salt
- 2 cups buttermilk
- 1 Tbsp hot sauce
- 1/2 tsp garlic powder
- 1 tsp paprika
Seasoned Flour
- 1 1/2 cups flour
- 1/2 cup cornstarch
- 1 Tbsp paprika
- 1 tsp cayenne
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp white pepper (important for that KFC/Popeyes vibe)
- 1 tsp black pepper
- 1 tsp salt
Hot Honey Glaze
- 1/2 cup honey
- 2 Tbsp hot sauce
- 1 tsp red pepper flakes
- 1 Tbsp butter
- 1/2 tsp smoked paprika
- Pinch of salt
Instructions
1. Marinate (DON’T skip this)
- In a large bowl, mix buttermilk + hot sauce + spices
- Add chicken and coat well
- Cover and let the dish rest in the fridge for 4+ hours (or overnight for optimal results).
👉 This is what gives that deep, juicy, fast-food flavor
2. Double Dredge (the crispy secret)
- Remove chicken from marinade (don’t wipe it off)
- Coat in seasoned flour
- Dip BACK into marinade
- Coat again in flour
👉 This creates those crunchy ridges like Popeyes
3. Fry Like a Pro
- Heat oil to 350°F
- Fry chicken in batches:
- Dark meat: 12–15 minutes
- Tenders: 6–8 minutes
- Cook until the outside is golden brown and the internal temperature reaches 165°F
- Rest on a wire rack ( not paper towels- wire rack keeps it crispy )
4. Make the Hot Honey
- Melt butter in a pan
- Add honey, hot sauce, pepper flakes, paprika
- Warm gently (don’t boil). Taste and adjust heat level
5. Finish (signature move)
- Lightly brush or drizzle hot honey over the chicken
- Don’t fully soak it—you want crispy + glossy
