Easy Chocolate Haupia Pie

Ingredients
Crust
- 1 pre-made graham cracker or pie crust
Chocolate Layer
- 1 cup semi-sweet chocolate chips
- 1 cup heavy cream
Haupia Layer
- 1 can (13.5 oz) coconut milk
- 1 cup water
- 1/3 cup sugar
- 1/3 cup cornstarch
- 1/2 cup cold water
- Pinch of salt
Instructions
1. Prepare the Crust
Place crust in pie dish if needed. Set aside.
2. Make Chocolate Layer
Heat heavy cream until hot (not boiling). Pour over chocolate chips in a bowl.
Let sit 2 minutes, then stir until smooth.
Spread chocolate mixture evenly into crust. Refrigerate 15 minutes.
3. Make Haupia Layer
In saucepan combine:
- coconut milk
- 1 cup water
- sugar
- pinch of salt
Heat over medium.
In small bowl whisk:
- cornstarch
- 1/2 cup cold water
Slowly whisk slurry into coconut mixture.
Cook 5–7 minutes, stirring constantly, until thick and smooth.
4. Assemble Pie
Pour haupia mixture over chilled chocolate layer.
Smooth top gently.
5. Chill
Refrigerate at least 4 hours or until fully set.
6. Serve
Top with whipped cream or chocolate curls if desired.
Slice and enjoy cold.
