Chicken Long Rice Recipe
Ingredients
To make this easy chicken long rice, you’ll need:
- 1 pound chicken thighs or chicken breast
- 6 ounces glass noodles (bean thread noodles)
- 4 cups chicken broth
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, sliced
- 2 tablespoons soy sauce
- 2 green onions, chopped
- Salt and pepper to taste
Time and Serving Size
- Prep Time: 10 minutes
- Cook Time: 30 minutes
- Total Time: 40 minutes
- Serves: 4 people
Instructions
1. Soak the Noodles
First, place the glass noodles in a bowl of warm water. Then, let them soak for about 10 minutes until they soften. After that, drain and set them aside.
2. Cook the Chicken
Next, add the chicken to a large pot and pour in the chicken broth. Then, add the minced garlic and sliced ginger. Bring everything to a boil; however, once it starts boiling, reduce the heat to low and let it simmer gently for about 20 minutes. During this time, the chicken will become tender and flavorful.
3. Shred the Chicken
Once the chicken is fully cooked, carefully remove it from the pot. Next, use two forks to shred the chicken into bite-sized pieces. Meanwhile, keep the broth simmering on low heat.
4. Combine Ingredients
Return the shredded chicken to the pot. Then, add the soaked glass noodles and soy sauce. At this point, stir everything together so the noodles can absorb the savory broth.
5. Simmer the Dish
Let the mixture simmer for another 5–10 minutes. As a result, the noodles will become soft and infused with flavor. Be careful, however, not to overcook the noodles, as they can become too soft.
6. Final Seasoning
Taste the broth and add salt and pepper as needed. Finally, stir in the chopped green onions for a fresh, slightly crisp finish.
7. Serve and Enjoy
Serve the chicken long rice hot. For best results, enjoy it immediately while the broth is warm and comforting.
Chefs Tips
- Use chicken thighs: They are more flavorful and stay juicy
- Don’t overcook the noodles: Otherwise, they can become mushy
- Adjust the broth: Add more broth if you prefer a soupier dish
- Make it ahead: The flavors deepen over time, making leftovers even better
